World Series Playoff Chicken Stripes

Delicious Chicken Recipe

Total Time: Prep. 15 min. Bake 30 min.         
​ Makes 4 servings

Ingredients

​6 Frozen or Fresh boneless chicken breast (large strips)
1/8 cup olive oil
1 sliced onion (save a few slices for topping)
1 cup pancake mix
1 tsp salt
1/2 tsp ground pepper
1 tsp paprika
1/2 tsp poultry seasoning
1/2 cup crushed tortilla chips
1 egg lightly beaten

Game day Italian Pasta Salad

I prefer baking in glass

My husband wont slice with out his mandoline

​We love baseball, especially if the Cubs are playing.  My husband is a die-hard Chicagoan.   I created an easy oven; chicken breast strips recipe, so I would not be cooking when the game is on.  Partnered it with Italian pasta salad, wedges of freshly harvested apples and for desert my famous "Marys" sugar cookies in a baseball design. Hey, batter,  batter.

Directions

Preheat oven 375 degrees
Thawed or fresh chicken breast wash and pat dry
13x9 glass baking dish, pour olive oil & arrange onion slices in baking dish
Mix in shallow dish breading mixture
lightly beat egg yolk in a bowl
Double breaded:  
1. Toss both sides, patted dry chicken breast in breading mixture
2.  coat with egg yolk  
3.  Bread again
Place in baking dish
sprinkle a little extra breading mix over chicken
​add for garnish a few onion slices
dust with paprika
​
Cover and refrigerate till game
Bake 375 degree 25 min.
Broil  5 min.
Serve
