My husband Don came from a family of "Dad's" in the kitchen. I am spoiled. Keeping the pantry filled, is a good way to ensure his creativity and I'm happy to step out of the kitchen. Don and I have had many a "date" night at the grocery store. He is a true foodie and loves to read ingredient labels, scout the meat department, I love him cooking. This was a lazy Saturday and to my surprise he is up and looking for something to heat up his cast iron pan over. Yippee, Italian pork sausage waiting in the frig. You'll love it. Ingredients: Serves a Hearty 4
Italian Sausage 1 Lb Pork Italian Sausage 4 Sweet mini peppers 1 teaspoon homemade garlic powder 1 Tablespoon butter 1 large onion chopped salt and pepper 6 eggs scrambled
Preparation:
Cook Italian Sausage, crumbled and nicely browned, Drain any fat. Set aside. Saute peppers, onion in butter, season with salt and pepper, combine into sausage in cast iron pan. Set aside. Scramble eggs do not overcook, take off of heat before browning shows. Fold eggs into 1/2 of the sausage/veggie mixture, cook on low for 2 minutes. Serve immediately. Store/freeze remaining sausage. Serve withOld Fashioned Baking Powder Biscuits. Use saved sausage for a quick dinner: "On My Soap Box" Country Quiche
