Healthy bone marrow goodness "Beef chuck roast, bone in"

Ingredients
2-6 lb. Beef Chuck Roast (bone in, washed, trimmed)
4 cups beef broth
1 large onion quartered
5 clove garlic smashed
Fresh Spices (Oregano, Rosemary, Thyme)
2 tsp salt
1 tsp fresh ground pepper
1 lemon quartered
1 large apple quartered
10 red potatoes
20 large baby carrots
1 large yellow bell pepper quartered
1/4 cup butter melted in pan

​My family menu often surrounds itself by the specials I find at the local market. I scored a 50% off butcher coupon for this $36.00 bone-in roast.  I love that this will feed my family at least three meals and give me great ingredients for a hearty bone marrow soup 
(healthy benefits below) which will end up in the freezer.   Let's cook smart and save ourselves time.

Oven 450 degrees braising 5 min. each side
Oven 300 degrees roasting 4 hours
​Servings 8 plus leftovers for soup

Directions
Wash, trim excess fat from Roast
​Braise, roast in butter,  large stove top to oven pan or free standing  roaster oven 5 min. each side, salt, and pepper 
Transfer to oven safe pan, add fresh spices, garlic, to the top of roast, place 1/ 4 sliced onion underneath roast, 1/2 sliced onion on top of roast, finish Arrange all other ingredients around roast.
Cook 300 degrees 4 hours,
​Final meat temperature well done  170 degrees
Rest for 10 min. slice/plate/serve
save leftovers for nutritious bone marrow/beef soup
